
Why is cheese so awesome? I know it naturally contains the flavor trifecta, and covers a wide swath of the texture spectrum, and it gets melty-gooey in ways that no other food-stuffs come close to achieving. But when you think about what it actually is, the entire premise is actually really gross. I mean, not just the nature of the dairy industry and the environmental tolls we blindly accept just so we have milk. But then we take that milk and let it spoil. We even add stuff to it so it spoils faster. And then we smash the resulting mass of wet globagules into a specified shape, and then we just toss it on a shelf until it gets moldy. Sometimes, after the compressed wad of curdled cow juice is completely coated in mold, it gets left on that shelf for YEARS until it dries out so much you need a hammer and wedge to break it up into manageable chunks. And then those chunks need to be shredded almost into powder before we can palatablely consume it. It’s WEIRD!
Not as weird as yogurt though. That stuff is a veritable petri dish of living bacteria, swimming in their own waste, with fruit on the bottom. Yum-y.
